More Oatmeal Mullings…
Hey everyone… how’s it going?
Hope your weekend has been excellent… mine’s been fun.
Got to babysit the nephews ALL… BY… MY…SELF this weekend… it had its good moments, and its harrowing moments!! LOL.
But, I digress!! The weekend has been fun overall.
Anyway, I got to thinking some more about those fabulous Cottage Cheese Oatmeal Pancakes from my post last week and I wondered… would they be good with blueberries mixed in?
I’ve never had luck making pancakes with blueberries because there always seems to be some blueberries too close to the top that burn too much while the batter isn’t quite cooked through, so dunno… I mean this batter is way different from the traditional stuff made from flour… so far I’ve had no problems with it cooking through perfectly every time.
Besides, I almost want to believe that it wouldn’t matter if it doesn’t cook through all the way because its OATMEAL and COTTAGE CHEESE, so it won’t wind up being that weird mushy middle if its not cooked through all the way, right? It will just be creamy thanks to the cheese …
… plus I’m wondering if its better to BLEND the blueberries in with the other ingredients, in the blender and make blueberry flavoured batter? Or better to just toss them into the already blended mixture whole?
Also, there’s a good chance that the finger I injured a few weeks ago actually IS broken.
Sigh… off to the Doctor I go … not so impressed, but I’m sick of babying it … especially if it isn’t gonna get better by itself.
Ok, so after I recorded this video I decided to try the blueberry version of the pancakes … I split the difference… I threw a handful of whole blueberries into the blender after the blending was done and pulsed it three times just to chop them a bit but not blend them into puree.
The conclusion? OUTSTANDINGLY DELICIOUS!!!
mmmm mmmmm! I highly recommend you give it a try. Wow!!
I also think they’d be totally fine with the blueberries just tossed in whole. There were a few blueberries that didn’t get chopped in my three pulses and everything came out perfectly (except for the one pancake I burnt slightly because I was too busy writing this blog to pay attention to the frying pan! haha.. oops)

And I don’t really have to tell you this time what its best for right? Its obvious isn’t it, that this one is really great for Weight Training?

Nice to hear about the blueberries. I just bought a couple pints. I’ll have to try this. Maybe I’ll use the blender for the pancakes this time instead of just stirring it with a spoon, which worked swimmingly. I think I’ll make a batch of batter that’ll last for a few days. That would be okay, no?

I wanted to mention a couple recipe videos that I saw earlier from The Minimalist (from the New York Times) on youtube.
For fluffy Whole Wheat Pancakes. Separate the whites from the yolks. Beat the whites until they expand and are fluffy with peaks. Then I suppose you can either discard the yolks or mix with the dry ingredients then FOLD in the whites. (This beating egg whites step might be something worth checking out).
Easy Whole-Grain Flatbread. Water, salt, olive oil, whole wheat flour. Whisk, pan, oven. Quick and easy. Here’s the youtube link to see it made. Hopefully you don’t mind. http://tinyurl.com/mbozzx

gee, Karen, I don’t know if a batch will last unless you cook it all at once…it WILL be open eggs… I’d hesitate to keep the batter in the fridge… I know it starts to thicken up quite quickly just after blending, so it might turn to cement on you!! LOL
