How ‘Eating Right’ Becomes A Habit
Hey gang!! I’ve got a quick story for you today!
I had a little something interesting happen to me on Christmas Day as I was driving out to my brothers’ in the burbs.
Although, THIS ‘little something’ actually happened in my HEAD.
Yup, here it comes, a story about mindset.
This one involves the challenge of eating right… and some innocent little yams!
How exactly DOES ‘eating right’ become an automatic response … a habit? Where you don’t even really have to think about it anymore? You just do it?
It’s happened to me, without my really even realizing it… until these thoughts went through my mind as I drove:
If you don’t think you ‘like’ certain whole, natural, healthy foods YET, keep TRYING.
Give those taste buds a chance to catch up to your intentions.
It’ll happen eventually!

Here’s the recipe I promised (with my thanks to the Greatist Website and Kate Morin):
Roasted Cauliflower and Broccoli Recipe
What You’ll Need:
1 head broccoli, broken into 1-inch florets
1 head cauliflower, broken into florets
4 tablespoons olive oil
3 garlic cloves, thinly sliced
¼ cup grated Parmesan cheese
Salt and pepper to taste
What to Do:
Soak garlic slices in olive oil for about 20 minutes to infuse flavor.
Preheat oven to 400 degrees.
Toss broccoli and cauliflower with oil and garlic. Season with salt and pepper.
Roast until browned and tender, 25 minutes, tossing veggies halfway through.
Remove the pan from the oven, toss veggies with Parmesan, and return to oven for another 2 minutes.
Take out of oven and add a little more parmesan while still very hot.
Serve alongside a lean protein for a healthy and filling dinner!
Serves 4
* NOTE: I found that when I made this exactly as the original recipe called for I burned the vegetables a little too much, the garlic wound up on the bottom of the pan without leaving much flavour on the veggies, and all the cheese melted to the bottom of the pan, so I modified it slightly to what you’re reading above so none of that would happen. It’s extremely yummy! Try it out!
